But. Trust me when I say that you’ll want to try them. Using avocado creates a super rich, fudgy texture. At the same time, the cocoa powder and sugar-free chocolate are powerful enough to mask its flavor.

No one will know there’s smashed avocado in these brownies. All you can taste is the chocolate! And while this is a great way to use up fresh avocados that will spoil soon, you can also use frozen avocados to make these.

  • Melt butter and chocolate. Use a double boiler to melt on the stove. Cool slightly.

  • Blend wet ingredients. Place avocado, eggs, and vanilla into a high-power blender and blend until smooth. Add melted butter and chocolate, and blend again until smooth.

TIP: You can also use a food processor for this step.

  • Pulse. Add the wet ingredients to the blender and stir in with spatula. Pulse a few times to combine, but don’t overmix.

  • Bake. Bake until brownies are just barely set and no longer wet, but still moist. Cool completely before cutting.

TIP: Don’t overcook! Take the brownies out of the oven when they are just barely set, and still very, very soft. If you insert a toothpick, it should come out with a tiny amount of brownie batter on it that you can roll into a ball between your fingers. If you wait until the toothpick comes out clean, they will be too dry!

Are avocado brownies keto?

Can I use a different sweetener?

I don’t recommend erythritol or other brands of keto sweeteners, as these tend to create a gritty texture in brownies. Even when they don’t, they crystallize within a day or two – not good if you don’t eat them all in one sitting!

Can I omit the butter?

For the best taste, you really need a blend of both avocado and butter in there. You can buy grass-fed butter for maximum benefits, but pleasedon’t skip it. Believe me, I’ve tried!

If you need a dairy-free alternative to the butter, I recommend butter flavored coconut oil as a substitute.

  1. Preheat the oven to 325 degrees F (163 degrees C). Line a 8x8 in (20x20 cm) glass baking dish with foil or parchment paper and grease lightly. Clip the edges of the liner to the pan with plastic clips. (This is temporary. They don't need to be oven safe.) Set aside.

  2. Melt the butter and chocolate in a double boiler on the stove. (Boil water in a pot, place the butter and chocolate into a heat proof bowl, and place on top of the pot. Heat, stirring occasionally, until melted.) Set aside to cool for a couple of minutes. (You can also do this in the microwave if you prefer. Be careful not to burn it.)

  3. Place the avocado, eggs, and vanilla in a high-power blender or food processor. Puree until smooth. Add the melted butter/chocolate mixture and puree again.

  4. In a small bowl, stir together the almond flour, cocoa powder, and sweetener. Add the dry ingredients to the blender or food processor and stir in with a spatula. Pulse a few times until just combined, scraping down the sides as needed. (Don't overmix.)

  5. Spread the batter into the prepared baking pan. It will be thick, so the clips on the parchment or foil will help. Smooth the top with a spatula. Remove the clips.

  6. Bake about 20-30 minutes, until brownies are barely set. The top should no longer be wet, but still be very soft. An inserted toothpick will come out with just a small amount of batter on it. Cool completely to firm up before cutting.
