Ingredients

  • 2 oz. 55 g butter, at room temperature
  • 1 oz. 28 g pecans or walnuts
  • 4 tbsp 4 tbsp coconut flour
  • ½ tsp ½ tsp ground cinnamon
  • ¼ tsp ¼ tsp vanilla extract
  • 1 (5¼ oz.) 1 (150 g) tart/sour appletart/sour apples

For serving

  • ¾ cup 180 ml heavy whipping cream
  • ½ tsp ½ tsp vanilla extract

Making low carb simple

Instructions

Instructions are for 4 servings. Please modify as needed.

  1. Preheat the oven to 350°F (175°C). Mix soft butter, chopped nuts, coconut flour, cinnamon and vanilla into a crumbly dough.

  2. Rinse the apple, but don't peel it or remove the seeds. Cut off both ends and cut the middle part in four slices.

  3. Place the slices in a greased baking dish and add dough crumbs on top. Bake for 15 minutes or more or until the crumbs turn golden brown.

  4. Add heavy whipping cream and vanilla to a medium-sized bowl and whip until soft peaks form.

  5. Let the apples cool for a couple of minutes and serve with a dollop of whipped cream.

Tip!

These baked apples can be served with whipped cream, full-fat crème fraiche, mascarpone, or a slice of cheddar. If you're allergic to nuts you can simply exclude them or substitute sunflower or sesame seeds to keep the crunch.

    we love this recipe - I've made it three times. I slice the apples so I get 4 slices per apple. It's so yummy, keto apple crumble with cream, my favourite.

    Hello out there?Are you serious about not removing the seeds?......Ever? Do you really mean we are to leave them and even eat them? YUK! I would remove anyway....Please amend recipe if you don't mean us to eat the seeds.

    So I have an apple tree and wanted to make a low carb dessert with the apples. Cane upon this one. At first I was super excited as I have a lot of apples. However did not like them at all. I wasn't even sure how to eat them. Pick up and pop one in my mouth , use a fork , a knife.?? ALl of the crublings of course fell off as I tried to eat them. Anyways I would waste me time on them again.

    Haven't tried it yet. Wondering whether coring (since I'm not sure about the seeds either) and chopping and putting in a buttered little casserole dish with the crumbles on top, kind of like an apple crunch, with a little 'brown sugar' Swerve added, might not make a difference? Kids just left and I have some apples in the house from their visit so might give that a try instead of just tossing all the apples outside for the birds! Whipped cream or a small scoop of homemade keto vanilla ice cream on top sounds yummy, too.

    Common sense you do not eat the core and seeds. You only eat slices of apple with the crumble on top

    The crumble tasted powdery. Next time I would like to add granulated sugar substitute to the crumble. My 5-yr-old said it tastes horrible. Hubby and I gave it 3 stars

    It's curious that the recipe goes to the extent of forbidding removal of the apple seeds at the start, yet doesn't mention them again.

    I think apple seeds are not meant to be eaten - In the 70s, I vaguely remember reading a 1950s Nancy Drew story about how she poisoned the young male friend whom she had a crush on by serving him her homemade fruit salad or something at various picnics and it had apple seeds in it.
    I'll check Wikipedia on it: "Apple seeds contain small amounts of amygdalin, a sugar and cyanide compound known as a cyanogenic glycoside. Ingesting small amounts of apple seeds causes no ill effects, but consumption of extremely large doses can cause adverse reactions. It may take several hours before the poison takes effect, as cyanogenic glycosides must be hydrolyzed before the cyanide ion is released."

    For years I have made a grain-less version of "apple crumble without the crumble" by using almost all of the ingredients that this recipe calls for (though without the coconut flour that is called for above, which probably makes the above recipe quite dry.)
    I use a sweeter apple, like Pink Lady or Fuji, and I don't add sugar or other sweetener.
    I cut one apple into a 1/2 inch dice (after discarding both the core AND the seeds!) and put in a small baking dish, squirt some lemon juice on that, add some vanilla extract, cinnamon, pecan chips, and room-temperature or melted butter, mix everything together, cover the dish with its glass lid (or aluminum foil), and bake at 350, stirring once or twice, for half an hour or however long it takes for the apple pieces to cook through.
    It's really tasty with a dollop of whole-milk greek yogurt.

    Hi,
    could you also make a batter from egg that resembles the "classic" baked-banana"? Like e.g. egg yolk and coconut flakes? Has anybody tried something like this?

    Yes, you eat the seeds! When I eat an apple, I eat the core as well! Fibre!

    How can apple seeds be poisonous when most British people eat the whole core and seeds, and not waste the good bit of an apple? Talk about hearsay! When I cook with apples I just chop up the core finely. Not that many seeds compared to an American pumpkin! 🤣🤣🤣🤣🤣
